Obviously just because one VC is interested in what I am doing doesn’t mean that others will be, but what should I be doing to let the VC community know that one of theirs is looking at me?
If I have interest from a VC, how can I leverage that to get other VCs interested?

Unless you're talking to a partner the VC isn't actually interested. VCs spam all companies with invitations to get some coffee and chat, but it doesn't mean anything.
Fundraising is a full time job. Either go do that or focus on building your product.
You probably won't, but you should just ignore them.
Does the level of interest actually mean you have a terms sheet? So many VCs don't want to say no and shut doors. But nothing says they have real interest like a terms sheet.
Once you have a terms sheet you are in a better position to get more offers from other VCs.
Agree with all points above. Also you shouldnt really be focusing your energy on attracting as many VCs as you can, versus just building your product & doing your research and see which VCs are a good fit for your startup. Money is money but when it comes from a VC partner that actually is interested in your product/industry, you become more than just a part of their portfolio.
